Recommended Tools:
- LARGE SKILLET – a large skillet is needed to bring the butter, sugar, milk, and cocoa powder to a boil. Personally I love using my cast iron skillet for this.
- WHISK – the chocolate mixture will need to be stirred so it doesn’t scorch on the bottom of the pan

- WAX PAPER OR PARCHMENT PAPER – you will drop the cookies onto wax or parchment paper to allow to cool down before popping them in the refrigerator.

- BUTTER – I use salted and unsalted butter interchangeably in this recipe without any difference in the taste
- WHITE SUGAR – a cookies isn’t good unless it has the perfect amount of sweetness
- MILK – adds a rich, moisture to the cookies
- UNSWEETENED COCOA POWDER & CREAMY PEANUT BUTTER – brings the rich and creamy flavors that
- VANILLA EXTRACT – helps to enhance all the yummy flavors (a little secret of mine…vanilla is the one ingredient I never measure when I’m baking)
- QUICK-COOKING OATS – the base that holds the cookie together and adds the perfect texture
Overview – How to make High Altitude No Bake Cookies:
- BRING CHOCOLATE MIXTURE TO A BOIL – mix butter, sugar, milk, and cocoa powder together in a pan and bring to a rolling boil. Boil for 1 minute. Stir continuously.
- MIX TOGETHER WITH PEANUT BUTTER, VANILLA, & OATS – pour chocolate mixture into a large bowl and mix all ingredients together.
- DROP COOKIES ONTO WAX PAPER – drop the cookies onto wax paper and cool.
- STORE IN FRIDGE – place cookies in an airtight container and store in the refrigerator.

Peanut Butter Chocolate High Altitude No Bake Cookies
Equipment
- 1 large skillet
- 1 whisk
- 1 large mixing bowl
- 1 cookie scoop
- 1 parchment or wax paper
Ingredients
- ¾ cup butter
- 2 cup sugar
- ¾ cup milk
- 6 tbsp unsweetened cocoa powder
- ½ cup creamy peanut butter
- 2 tsp vanilla extract
- 3 ½ cup instant oats
Instructions
- BRING CHOCOLATE MIXTURE TO A BOIL – mix butter, sugar, milk, and cocoa powder together in a pan and bring to a rolling boil over medium high heat. Boil for 1 minute. Stir continuously
- MIX TOGETHER WITH PEANUT BUTTER, VANILLA, & OATS – pour chocolate mixture into a large bowl and mix all ingredients together. The mixture should be thick but not dry. Add more oats if the mixture is runny.
- DROP COOKIES ONTO WAX PAPER – drop the cookies onto wax paper and cool.
- STORE IN FRIDGE – place cookies in an airtight container and store in the refrigerator.
