Peanut Butter Chocolate High Altitude No Bake Cookies

1 large skillet
1 whisk
1 large mixing bowl
1 cookie scoop
1 parchment or wax paper
- ¾ cup butter
- 2 cup sugar
- ¾ cup milk
- 6 tbsp unsweetened cocoa powder
- ½ cup creamy peanut butter
- 2 tsp vanilla extract
- 4 - 4½ cup instant oats
BRING CHOCOLATE MIXTURE TO A BOIL – mix butter, sugar, milk, and cocoa powder together in a pan and bring to a rolling boil over medium high heat. Boil for 1 minute. Stir continuously
MIX TOGETHER WITH PEANUT BUTTER, VANILLA, & OATS – pour chocolate mixture into a large bowl and mix all ingredients together. The mixture should be thick but not dry. Add more oats if the mixture is runny.
DROP COOKIES ONTO WAX PAPER – drop the cookies onto wax paper and cool.
STORE IN FRIDGE – place cookies in an airtight container and store in the refrigerator.
