This easy homemade apple pie recipe is filled with tender, shredded apples covered in velvety smooth cream with a hint of cinnamon on top. With only 10 minutes of prep time, this easy apple pie is perfect for special occasions or simply a weekend dessert.

Nothing says fall (and apple season) quite like a slice of warm apple pie and a big scoop of vanilla ice cream. Though in my humble opinion, classic apple pie is so delicious it can be served year-round. Shredded Apple pie is my husband’s favorite pie so our house is often filled with the amazing aroma of juicy apples and warm cinnamon.

The best kind of apples to use for apple pie should be an apple with a sweet and slightly tart flavor and firm texture. The apple needs to hold up when baked and keep its delicious flavor. Don’t be afraid to combine different apples for the perfect flavor.

  • GRANNY SMITH APPLES – they have a signature tart flavor and pair great with sweet apples, typically available year round
  • HONEY CRISP – extra-sweet flavor with a crisp texture that works excellent for baking and snacking
  • ENVY – sweet and crisp that keeps a firm texture when baked
  • GALA – have a gentle sweetness but hold up well when baked, typically available year round
  • PINK LADY – sweet-tart flavor with a wonderful crisp texture
  • GOLDEN DELICIOUS – mild sweetness, tend to break down when baked so they should be combined with a firm apple (like granny smith apple)

PIE CRUST – use a homemade pie crust or store-bought pie crust (if you must). Check out my favorite pie crust recipe that turns out a flaky buttery crust, even at high altitude. This is the BEST pie crust and I give all the tricks and tips to make it easy.

APPLES – use 5-6 large apples or 6 cups of shredded apple. Use your favorite apples or see the list above for ideas on which apples to use.

SUGAR – adds the perfect kiss of sweetness

FLOUR – use all purpose flour to thicken the apple pie to ensure there is no soggy bottom or runny pie filling

HEAVY CREAM – adds a velvety rich creaminess that pairs perfectly with the cinnamon apple pie filling

VANILLA EXTRACT – helps to enhance the flavor (a little secret of mine…I never measure vanilla when I’m baking)

CINNAMON – adds the perfect amount of spice and flavor for tender cinnamon apples

Overview – How to make High Altitude Shredded Apple Pie with Cream:

PREPARE PIE CRUST – roll out the pie dough on a lightly floured surface and place in the pie pan.

TIP: keep the pie crust cold to prevent the fat from melting before the pie crust is put in the oven. A cold pie crust will create flaky layers in the oven.

PREHEAT OVEN TEMPERATURE TO 375 F

PEEL AND SHRED APPLES – use 5-6 large apples for 6 cups of shredded apples

MIX CREAM FILLING & POUR OVER APPLES – lightly sprinkle the apple mixture with cinnamon

BAKE FOR 1 HOUR – or until golden brown and the center of the pie is set up

Can you freeze apple pie?

There are 3 options for freezing apple pie:

  1. FREEZE FILLING – cut the apples ahead of time and freeze. Thaw apples overnight and remove extra juice before adding to pie crust
  2. FREEZE BEFORE BAKING – sprinkle 1-2 Tbs of flour on the bottom of the pie crust before adding the filling. Freeze pie until firm and then wrap in aluminum foil. Freeze for up to 3 months.
  3. FREEZE AFTER BAKING – cool completely. Wrap the pie in aluminum foil. Freeze for up to 3 months.

Do you blind bake apple pie crust?

The pie crust for an apple pie should not be blind baked. The pie crust will be baked with the pie. Blind baked pie crusts are for no-bake pies.

How long does apple pie last in the fridge?

Apple pie should be lightly covered with a lid or plastic wrap in the refrigerator. The pie should be eaten within 7 days.

How to reheat apple pie?

There are 2 options to reheat apple pie:

  1. IN THE OVEN – preheat oven to 350 degrees, place the pie pan in the oven for about 15 minutes
  2. IN THE MICROWAVE – place a slice of apple pie on a microwave-safe plate, reheat in 30 second intervals until warm

Ingredients

  • 1 9 inch prepared pie dough
  • 6 cups shredded apple
  • 1 cup sugar
  • 1 ½ tablespoon flour
  • 1 cup heavy cream
  • ½ teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  • Preheat oven to 375℉
  • Prepare pie crust – roll out the pie dough on a lightly floured surface and place in the pie pan
  • Peel and shred apples – use 5-6 large apples to make cups of apples. Place shredded apples in pie crust WITHOUT pressing them down.
  • Mix cream filling and pour over apples – mix flour, heavy cream, vanilla, and sugar together in a small bowl. Pour over apples in pie pan.
  • Sprinkle cinnamon over the apple filling
  • Bake for 1 hour or until the pie is golden brown and the center of the pie is set up
