So what is different about cooking perfect hard-boiled eggs at high altitudes versus lower altitudes? Simple answer: atmospheric pressure. Long answer: the higher elevation you travel (or live) the lower the air pressure becomes. The lower air pressures changes the boiling point of water.
There are different approximate boiling temperatures of water for every elevation. The boiling point of water at 8,000 feet of elevation is 198°F versus sea level is 212°F. Getting the perfect boiled eggs at high altitude requires a little longer required boiling time due to the lower temperature.
Follow this easy hard boiled egg recipe for a delicious breakfast in the mountains by simply adding a few minutes of cooking time. Boiling eggs at sea level typically takes 10-12 minutes but this will result in soft-boiled eggs at high altitude. Boil for 15 minutes at high altitude for brilliant yellow egg yolks and perfectly cooked egg white.

Pot of water – the size of pot will depend on how many eggs you plan on cooking. The eggs will need to be in a single layer and at least 1 inch of water covering the eggs.
Slotted spoon – the spoon will be used to slowly place the raw eggs in the boiling water and be taken out
Large bowl of ice water – the eggs will need to be placed in cold water to stop the cooking process

Large eggs – the number of eggs all depends on your personal need. The cook time remains the same no matter how many eggs you cook. The eggs need to be at room temperature for even cooking. The general rule of thumb is to use older eggs (like 10-15 days) versus fresh eggs for best results when peeling off the egg shell.

How to make the perfect high altitude hard boiled eggs:
Bring water to full rolling boil
Fill the pot with tap water and place on high heat on the stove. Bring the water to a full rolling boil.
TIP: fill the pot with enough water to cover the eggs by at least 1 inch
Cook eggs for 15 minutes
Carefully place eggs into the boiling hot water with a slotted spoon. Cook for 15 minutes.
TIP: do not cover the pot with a lid
Place eggs in ice cold water bath
Immediately use the slotted spoon to gently transfer the eggs from the hot cooking water to ice cold water.
TIP: continue to fill the large bowl with cold running water to ensure the water does not heat up when cooking a large batch of eggs
