Ingredients

  • 2 cups boxed pancake mix
  • 1 cup milk or buttermilk
  • 3 tablespoon white sugar
  • 2 tablespoon butter - melted
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  • In a large bowl mix the pancake mix and sugar together.
  • Add the melted butter, vanilla extract, and eggs to the dry ingredients.
  • Pour the milk into the mixture as you stir until all the ingredients are combined. Be sure to not over mix.
  • Heat a griddle to medium heat. Use non-stick spray at the beginning. When the griddle is heated, pour 1/3 cup of batter for each pancake onto the griddle.
  • Allow the pancake to cook until bubbles start to appear and the batter starts to lose some of its shine along the edges.  Flip the pancake over.  Cook until both sides are golden.

Notes

Homemade Pancake Mix

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
