Cast Iron Pork Chop ingredients:
- Boneless pork chops – 1/2 – 3/4 inch thick
- Sea salt
- Paprika
- Garlic Powder
- Black Pepper
- Bacon grease
How to make this gluten & dairy free pork chop recipe:
- Prepare the pork chops by removing them from the refrigerator about 30 minutes prior to cooking to allow them to come to room temperature. If the pork chops are wet with juice then pat them dry with paper towels.
- In a small bowl mix together the sea salt, paprika, garlic powder, and black pepper. Sprinkle the seasoning over both sides of each pork chop.
- Heat the large skillet to medium-high heat and place the bacon grease in the pan. The pan will be hot enough when smoke starts coming from the grease.
- Place each pork chop into the skillet and cook for 3 minutes to achieve a crisp golden brown sear.
- Flip the pork chop over and cook for an additional 3 minutes. Use a meat thermometer, the internal temperature will be 140 degrees when the pork chops are ready to be removed from the stove. Note: depending on the thickness of your pork chops, additional cook time may be required. See the Recipe Variations below.
- Remove the cast iron pan from the stove and tent aluminum foil over it. Allow the pork chops to rest in the cast iron skillet for 5 minutes. This will allow the temperature to rise to 145 degrees and create juicy pork chops.

Recipe variations:
- Bone-in pork chops or extra thick pork chops – preheat oven to 350 degrees. After cooking each side on the stove, place the cast iron skillet in the oven for 6-8 minutes or until the internal temperature reads 140 degrees.
- Olive oil or Avocado oil – use olive or avocado oil to cook the pork chops in
- Pork Tenderloin – cook for the same amount of time
- Grilling – season both sides of the pork chops, grill on medium high heat for 3 minutes on each side

My family’s personal preference is to serve these delicious cast iron pork chops with steam broccoli and buttered egg noodles (obviously these don’t follow the dairy & gluten free diet but again, this is just personal preference). Any skillet will work for thin pork chops. If the pork chops are thicker and need time in an oven, then an oven safe skillet will need to be used. Also this seasoning is delicious on grilled pork chops.
